
It's been quite some time since my last post. I've been working two part-time jobs that really gobble-up my time. My post on chicken prompted me to share my views on eggs. Eggs are really cheap. I was buying them at Costco in the largest package they carry.
I realize buying organic chicken can be expensive, especially if you have a family to feed. If you look around there are people who sell farm fresh eggs at Farmer's Markets, or from their homes. My wife buys them from a lady she works with for $2.00 a dozen. The lady apologized because she raised the price from $1.50 a dozen. Just about everyone can afford farm fresh eggs.
Most of us don't give a second thought about buying eggs, except remarking about how affordable they are. The link below is from Mark's Daily Apple. It's very interesting, and enlightens you how deceiving the politics in food labeling can be.
A study (PDF) of fourteen free range chicken farms conducted by Mother Earth News (I know, I know, how hippy-dippy can you get?) confirms that true pasture/range free chickens, given a natural diet of grains, insects, grasses, and seeds, produce eggs loaded with nutrients. Pasture raised eggs have more beta-carotene, vitamins E and A, and omega-3 levels, with less cholesterol and saturated fat than mass-market eggs.
