
I think dinner is probably the hardest meal to plan for most people. We don't plan to fail......We fail to plan. Stir-fry is one of my favorite dishes, whether you use chicken, beef, lean pork, or seafood, it's always a winner.
Make sure your chicken is boneless breast, and the beef & pork are lean. I usually purchase Top Round for the beef, and Pork boneless Top Loin roast. I always look for these items on sale, and process them into thin strips, and to the freezer they go. I had a stir-fry with shrimp last night, and yes I bought it on sale. The dinner was only around 800 calories, and I was stuffed. My dinner always compliments my lunch in the time department, as I always have my veggies handy.
